Kitchen Creigh-ations: Pineapple Cream Cake

This recipe comes from my grandmother's recipe collection, so it's pretty special to me. It is also a HUGE hit whenever I make it, and it's a pretty easy recipe to throw together! It's not overly healthy, but there's pineapple in it so that counts, right?! It's a great dessert to bring to a party, or in this case, a fabulous birthday cake for Yia-Yia.

Ingredients:

  • 3 packages {Stella D'Oro} Lady Fingers 
  • 11 oz. cream cheese
  • 3/4 cup sugar
  • 1 tsp. vanilla
  • 1 large can crushed pineapple, drained
  • 1 pint all purpose cream- add a little sugar!
  • crushed walnuts {optional}

Mix 11 oz. cream cheese, sugar & vanilla together. Add drained pineapple. Whip cream, then blend in with the other ingredients. Line springform pan with lady fingers~ all around upright {see picture} and then along the bottom of the pan. Layer: filling, layers of lady fingers, filling, lady fingers, end with filling on top. Sprinkle with crushed walnuts. Refrigerate until ready to serve. 

I usually make this cake the day of the event since I worry about the lady fingers getting soggy. Naturally, the leftovers are gone within a day or two so I'm sure it's fine if you want to make it the night before! {I just have never personally done it!} It's super easy to throw together and delicious!
