Kitchen Creigh-ations: Zucchini Scramble

This is a frequent recipe in our house, since everyone loves it {including one of my toddlers!} and it's super healthy! It also holds a special place in my heart since I can remember sitting down in my grandparents' kitchen eating this together when I was a little girl. I love being able to make it and enjoy with my family now. Do you have any recipes that hold a special place in your heart?

Almost all of the ingredients used are fresh vegetables and meats in Zucchini Scramble. To make this even healthier, try to pick a small can of tomato sauce with ingredients you can actually pronounce listed on the back. {I'm assuming you don't have the time to make sauce from scratch ;) } Try to find brands that are lower in sodium and do not add sugar to their cans!



  • 2 medium onions, sliced
  • 2 green peppers, cut up
  • 1-2 tbsp. butter
  • 1 lb. ground beef/turkey
  • 3 med zucchini, washed, sliced
  • 1 small 8 oz. can tomato sauce
  • pinches of basil, oregano, Italian seasoning, salt, pepper

Saute onions and peppers in butter until soft. Remove from pan and set aside. Cook meet until red color disappears. Remove from pan and set aside. Cook squash in same pan for about 8 min., turning often so it won't get too soft. Mix all ingredients and season to taste.

Yes, I brought back the Salad Shooter from the 80s. It makes this recipe SO much easier than chopping and slicing all of those veggies.
